Chestnuts are a traditional fruit in Corsica; they are handpicked in the Castagniccia Forrest (Upper Corsica), individually selected and then carried by donkeys to the nearest village to be ground into flour. This unique blend in the world gives it an exceptional personality strong and delicate, with a low bitterness. Pietra has a long fermentation period of 8 weeks in a temperature controlled room. In France this type of fermentation is called "la Garde". Pietra ages well and has a shelf life up to 2 years.
